Certified Organic Another unusual vegetable from the Wye Organic walled garden, huauzontle (pronounced wah-ZONT-ley) is to the spinach family as broccoli is to the cabbage family: you eat the shoots of unopened flower buds. It originates from central America, hence the name Aztec Broccoli. Earlier in the season it is more of a leafy shoot, and from around August onward the flower buds form. Relatively quick cropping, drought resistant and easy to grow, huauzontle has potential as a 'climate change crop'. It is best cooked as conventional broccoli or spinach: steamed, sweated or stirfried.
