This is a dish for those weeknights when you need something comforting and delicious. Serve this main with any side dish - be it mash, bread or rice, it is sure not to disappoint!

Ingredients
  • 4 chicken breasts
  • 1 whole bulb of garlic (about 10–12 cloves), peeled
  • 2 tbsp olive oil
  • 25 g butter
  • 200 ml double cream
  • 150 ml chicken stock
  • 1 tsp thyme (fresh or dried)
  • Salt and pepper, to taste

Optional: handful of spinach or mushrooms

Method
  1. Season the chicken with salt and pepper.
  2. Heat olive oil in a large pan over medium heat. Cook the chicken for 5–6 minutes per side until golden. Remove and set aside.
  3. In the same pan, add the butter and whole garlic cloves. Cook gently for 5–8 minutes until softened and lightly golden.
  4. Pour in the chicken stock and scrape up any browned bits.
  5. Add cream and thyme, stirring well.
  6. Return the chicken to the pan.
  7. Simmer for 10–15 minutes until the chicken is cooked through and the sauce thickens.
  8. Optional additions - Stir in spinach or mushrooms in the last few minutes.
  9. Serve with mashed potatoes, pasta, or crusty bread (perfect for soaking up that garlic sauce).
