This soup uses CeleriacOnions, and Dessert Apples (Adam's Pearmain) for a silky, sophisticated winter warmer. The apple cuts through the nuttiness of the celeriac beautifully. 

Ingredients 

  • 1 Celeriac (peeled and cubed) 
  • 2 Dessert Apples (peeled and cubed) 
  • 1 large Onion (chopped) 
  • 2 cloves Garlic 
  • 800ml Vegetable stock 
  • 1 tbsp Oil 
  •  A splash of cream (optional). 


Method 

  1. Roast the celeriac and apple chunks with oil at 200°C for 20 minutes until soft. 
  2. Meanwhile, sauté the onion and garlic in a large pot until translucent.  
  3. Add the roasted celeriac/apple and the stock.  
  4. Simmer for 10 minutes, then blend until completely smooth. Season generously with black pepper.
