Fresh oregano leaf, grown in our walled garden in the Wye Valley.
All herbs have their *signature* uses. Basil? Pasta and pesto. Dill? Pickled gherkins. Coriander? Spicy aubergine curry, naturally.
For oregano it has to be the pizza. Finely chopped, sprinkled in with the tomato sauce tucked in beneath the cheese or whatever other toppings are piled on top, yum!
Not into pizza? Maybe it's time for Argentinian chimichurri, a Mexican pozole, or a good ol' meaty or meat-free stew, soup or broth.
